Udon noodles

400g minced pork
4 tbsp sesame oil
1 tsp five spice mix
1 tbsp brown sugar
1 tbsp soy sauce
200g udon noodles
1 litre of vegetable broth
2 cloves of garlic (minced or finely chopped)
1 tsp of finely grated ginger
1 tbsp of soy sauce
1 tbsp of fish sauce
1/2 a brocoli
2 handfuls of fresh spinach
Sliced scallions
Crispy chili oil
1. Heat the sesame oil in a hot pan
2. Fry the minced pork with the five spice mix till the meat is nicely brown
3. Add brown sugar and soy sauce, fry until the meat is caramelized and crispy
4. Add vegetable broth, garlic, ginger, soy sauce and fish sauce to a pot and bring it to a boil
5. Add brocoli, spinach and the noodles, and boil until the noodles are tender
6. Divide the soup with noodles and greens into two bowls
7. Top with crispy pork
8. Serve with sliced scallions and crispy chili oil
